Mochi

Mochi is a chewy rice cake made from glutinous rice. It usually has a filling like red bean, taro, or fruit.

How to make it:

  • Pound your rice until smooth
  • Add your filling
  • Dusted it with cornstarch or potato starc

History of Mochi

Mochi has a long history in Taiwan. It came from Japan during the Japanese colonial era from 1895 to 1945. Taiwan adopted mochi-making and added local ingredients and flavours. This created a unique Taiwanese mochi culture with fillings like sweet red bean, taro , and tropical fruits such as mango and lychee. Today, Taiwanese mochi is a popular local treat and enjoyed worldwide.

Over the years, mochi has changed and evolved. While traditional flavours like red bean and taro remain favourites, new versions have appeared. You can now find matcha mochi, ice cream mochi, and even savoury mochi. Chefs in different countries have experimented with mochi in desserts like mochi-stuffed donuts, mochi waffles, and mochi pizza crusts.

Different Types of Mochi Desserts

Handmade mochi starts with glutinous rice pounded into a smooth, elastic paste using a wooden mortar. Skilled hands then shape the mochi into small pieces, usually cylindrical or rectangular. Finally, they dust it with starch to stop it from sticking. Handmade mochi has a richer, more authentic flavour.

Bulk mochi is made in larger quantities for convenience. Machines replicate the traditional pounding and kneading process. The mochi is filled, sealed, shaped, and checked for quality. Bulk mochi is ideal for personal treats or businesses that need larger amounts.

Some mochi comes without filling. Plain mochi offers a pure chewy experience. You can enjoy it on its own, as a topping for ice cream, or in desserts like daifuku or Zenzai.
