Method

Steps to make Giant Herbal Jelly Boba milk tea:

  • In a shaker cup or bowl, mix hot water with herbal jelly powder.
  • Pour the mixture in a round ice cube tray and let it chill in the fridge for atleast 2 hours.
  • In a shaker cup, mix hot black tea with creamer.
  • If preferred, mix in a ladle of sugar syrup to add additional sweetness.
  • Add ice until the 500ml line and shake until chilled.
  • To a serving cup, add the giant bobas and pour over your classic milk tea.

What is herbal / grass jelly?

Grass jelly, also called herbal jelly, is a soft, slightly firm dessert made from the leaves and stems of a plant called Mesona chinensis. The plant is boiled in water, which extracts natural substances that make the liquid set into a dark, jelly-like texture when cooled. The jelly itself has a mild, almost neutral taste and is chewy, making it perfect to eat on its own, add to drinks, or use as a topping in desserts. It is very popular in Taiwan, Southern China, and other parts of Southeast Asia. (source)

Yes, grass jelly is vegetarian, vegan and Halal-friendly. This because it is traditionally made from extracts of the plant Mesona chinensis, and polysaccharides from that plant are the main gelling agents used to form the jelly. These polysaccharides are plant compounds, not animal-derived.
