How does popping boba differ from tapioca pearls?
The main difference is in texture and flavour:

- Popping boba are juicy and burst with fruity flavour.
Popping boba pairs best with fruit teas, while tapioca pearls work well in milk teas. Although, feel free to use them both in fruit and milk teas. It's all personal preference. Traditional pearls usually come in only two flavours (regular or brown sugar), but popping boba is available in over 22 flavours, with the ability to create even more unique varieties in our UK factory.

Popping boba are made using a spherification process, which forms a thin, gel-like shell around real juice.
Ingredients include:
- Water
- Fruit juice and flavoured syrups
- Sodium alginate
- Calcium chloride or calcium lactate
- Sweeteners and natural colourings

How popping bobas are made
The “magic” of popping boba comes from spherification, which was first used in fine dining in the 1950s. The process creates small spheres filled with juice and a thin outer shell that “pops” when eaten.
You can make them yourself using a few simple ingredients: fruit juice, sodium alginate, and calcium chloride.
Make them at home
- Mix your chosen fruit juice with sodium alginate until fully combined.
- Refrigerate for a few hours to remove foam or bubbles.
- Prepare a bowl of water with calcium chloride.
- Using a syringe, drop the fruit juice mixture into the solution, one drop at a time.
- Let each drop sit for about a minute to form a thin gel shell.
This simple reaction between sodium alginate and calcium creates the classic popping effect, keeping the juice inside until you bite it.
