TOPPINGS: How to Prepare Cream Foam, Caramel Pudding and Herbal Jelly
Bubble tea toppings add texture, flavour, and excitement to every cup. Here’s a simple guide to preparing our DIY toppings cream foam, caramel pudding and herbal jelly. Prepare them fresh and ready to go for your bubble tea creations.
Ingredients
1. Cream Foam
- 20g Cream Foam Powder
- 300ml Double Cream
- 200ml Whole Milk
2. Matcha Cream Foam
- 15g Matcha Powder
- 15g Creamy Snow Powder
- 150ml Double Cream
- 100ml Whole Milk
- 15ml Fructose
3. Caramel Pudding
- 30g Caramel Pudding Powder
- 360ml Boiling Water
4. Herbal Jelly
- 50g Herbal Jelly Mix Powder
- 300ml Boiling Water

1. Cream Foam
A thick, creamy, cheesy layer on top. Torch to add flavour and “wow”.
Preparation
- Add all ingredients to a bowl.
- Use a blender or a hand mixer to whisk on high speed for 1 to 2min (with a blender) or 4 to 6min (with a hand whisk).
- Test the cream foam: take a transparent bowl or glass and add room-temperature water. Add a thin layer of the cream foam. If the foam fully clouds the water, the foam is not ready yet and needs to be mixed longer. Alternatively, you can gradually add a little more powder. If the foam stays nicely in a layer on top, it means it's ready.
- Store in the fridge to maintain consistency throughout the day.

2. Matcha Cream Foam
Matcha cream foam is made of slightly different ingredients than regular cream foam, but the preparation process is exactly the same.
Preparation
- Add all ingredients to a bowl.
- Use a blender or a hand mixer to whisk on high speed for 1 to 2min (with a blender) or 4 to 6min (with a hand whisk).
- Test the cream foam: take a transparent bowl or glass and add room-temperature water. Add a thin layer of the cream foam. 3. Caramel Pudding
A sweet and creamy pudding topping.
Preparation
- Mix the pudding powder with the hot water and stir until no lumps remain.
- Gently stir for another 2 minutes to enhance the texture.
- Let it cool, then store in the fridge for at least 2 hours (can be stored overnight).
- Take a ladle, cut the pudding and serve.
4. Herbal Jelly
A refreshing, slightly bitter jelly perfect for balancing sweet teas.
Preparation
- Mix the jelly powder with the hot water and stir until no lumps remain.
- Gently stir for another 2 minutes to improve the consistency.
- Allow to cool, then refrigerate for at least 2 hours (can be stored overnight).
- Take a ladle, cut the jelly and serve.
Final Tips
- Always store toppings in the fridge and use them within a day for the best taste and texture.
- Prepare at least 500ml/500g of these toppings at a time to make mixing easier.
- Experiment with different combinations to create unique and delicious recipes.
