One story suggests that, Liu Han-Chieh, the owner of a Taiwanese tea shop called Chun Shui Tang, decided to start serving tea cold. This was the first step in the development of the form of bubble tea we see today. The bubbles were then supposedly added in 1988, when a staff member decided to pour her “fen yuan” (tapioca pudding) into her tea, creating the first tapioca bubble tea.

An alternate account suggests that Tu Tsong He, a Taiwanese entrepreneur, came across fen yuan in a Taiwanese wet market and decided to add it to his green tea. He then developed the idea further, working with plastic factories to create straws wide enough for the tapioca. Tsong He began selling bubble tea from his store, Hanlin Tea Room, in 1986. Hanlin is now a chain with branches across the world.
